So with this recipe, I totally feel like I am cheating. It came straight from the package of Ocean Spray Craisins. (except I added one ingredient)
Oatmeal Craisins Dried Cranberries
White Chocolate Chunk Cookies
Ingredients:
2/3 cup butter (softened)
2/3 cup brown sugar
2 large eggs
1-1/2 cups old fashion oats
1-1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 5-ounce package of Craisins Dried Cranberries
2/3 cup white chocolate chunks or chips
my added ingredient
2/3 cup macadamia nuts
Preheat oven to 375
Use an electric mixer- beat butter and sugar together until light and fluffy
add eggs and mix well
Combine oats, flour, baking soda, and salt in a separate mixing bowl.
Add to butter mixture in several additions, mixing well after each addition.
Stir in dried cranberries, white chocolate, and macadamia nuts
Drop by rounded teaspoons onto cookie sheet.
(their directions say ungreased, but I sprayed mine with Pam)
Bake for 10-12 minutes or until golden brown.
Makes approximately 2.5 dozens

I will be taking the rest of the week off from blogging. Ian and I were in an accident on Monday. It was my fault. Thankfully, we are both ok as well as the other driver.
Ella started a fire in the microwave, Duke rolled all in poop, my right eye has been swollen from allergies. So needless to say, it was been a week and I feel like I can't keep my head above water.
However, we are leaving for the lake with some dear friends tomorrow and I couldn't be happier!!
Oh, and I need to go through 600 pictures from this past week at my nephew's wedding.....
