Happy Friday Y'all!! Did you know that today is National Homemade Soup Day. So with that being said, I thought I would share a new soup recipe. I mentioned before that I signed back up for WW and I found a Mexican Vegetable Soup using the app but I did switch it up a little. It was amazing.
Boneless Skinless Chicken Breast- 3 breast
Reduced-Sodium Chicken Broth- 4 Cups
Onion- 1 large (diced)
Bell Pepper- 1 large (diced)
Salt-to taste
Minced Garlic- 2 tsp
Ground Cumin- 2 tsp
Chili Powder- 1 tsp
Black Pepper- 1/4 tsp
Zucchini- 1 large (diced)
Canned Diced Tomatoes- 15 0z (Fire Roasted Variety)
Salsa Verde - 1 jar
Cilantro and Plain Greek Yogurt or Sour Cream to top.
Directions:
Put all ingredients in crock pot. Cook on slow for 6-8 hours or high for 3-4 hours.
What we had left over I froze and have been enjoying for my lunches this week.
